How to serve black caviar

    Cold, never frozen

    Keep the tin at 0⁠–⁠4 °C and set it on crushed ice at the table.

    The right spoon

    Mother-of-pearl, horn or glass — metal can leave a taste on the grain.

    How much

    About 30 g per guest as a starter, 10⁠–⁠15 g on canapés.
